Whipping is a cooking technique that involves incorporating as much air as possible into the mixture of ingredients. It is similar to beating, only generally carried out for a longer period and done using a mixer rather than by hand.Cream is generally whipped as an accompaniment to desserts. Eggwhites form stiff peaks when whipped and can be made into meringue.
