Wine containing carbon dioxide under pressure and which gives off appreciable quantities of this gas forming a more or less persistent froth when it is poured out. There are several types according to the method of making:bottle fermentation and bulk fermentation on the one hand which form gas naturally and carbonation on the other hand which is artificial impregnation with carbon dioxide. The OIV definition of this type of wine indicates a minimum pressure of 4 atmospheres at 20 oC and stipulates that the wine be made only from Vitis vinifera grapes.
