Cold smoked salmon is known as "lox," and is not cooked. It has a smooth texture and is often served with cream cheese and/or on bagels.
Hot smoked salmon has been cooked by the smoking process and is eaten just like cooked salmon.
An additional method of preparing smoked salmon is called Indian Hard Smoked Salmon. It is first kippered with salt and sugar and spices and then smoked until hard and jerky-like.
