Specialty Definition: Broccoli

(From Wikipedia, the free Encyclopedia)

Broccoli is a vegetable plant of the Brassica family. The part of the plant used is the flowerhead. The head of broccoli is actually made up of small flowers crowded together, as is the closely-related cauliflower (which means "cabbage-flower").

Broccoli is a cool-weather crop that does poorly in hot summer weather. It is usually boiled or steamed, but may be eaten raw and has become popular as a raw vegetable in hors-d'oeuvre trays. Broccoli is high in vitamin C and soluble fiber.
