MALIC ACID

1. A hydroxy acid obtained as a substance which is sirupy or crystallized with difficulty, and has a strong but pleasant sour taste. It occurs in many fruits, as in green apples, currants, etc. It is levorotatory or dextrorotatory according to the temperature and concentration. An artificial variety is a derivative of succinic acid, but has no action on polarized light, and thus malic acid is a remarkable case of physical isomerism.

Structural formula of malic acid

Malic acid is a tart-tasting organic acid that plays a role in many sour or tart foods. The chemical structure of malic acid is HO2C-CH2-CH(OH)-CO2H.

Apples contain malic acid, which contributes to the sourness of a green apple.

Malic acid can make a wine taste tart, although the amount decreases with increasing ripeness. The process of malolactic fermentation converts malic acid to much milder lactic acid.
