There are two sub-species, Plains bison and Wood bison.
Bison have a shaggy, dark brown winter coat, and a lighter brown (and lighter weight) summer coat. Bison can reach 6 feet tall, 10 feet long and weigh over 2,000 pounds. The heads and forequarters are massive, and both sexes have short, curved horns, which they use in fighting for status within the herd and defense. Bison mate in August and September; a single reddish-brown calf is born the following spring, and nurses for a year. Bison are mature at three years of age, and have a life expectancy of 18-22 years. Bison were central to the lifestyle of the Plains Indians. Before the introduction of horses, buffalo were herded into large chutes made of rocks and willow branches and then stampeded over cliffs. These buffalo jumps are found in several places in the US and Canada.
Bison were hunted almost to extinction in the 19th century; as few as 750 bison existed in 1890. The Bronx Zoo maintained a remnant herd, from which populations were re-established in Yellowstone National Park and other wildlife preserves, beginning early in the 20th century. A variety of privately-owned herds have also been established, starting from this population. The current American Bison population is estimated at 350,000, compared to an estimated 60-100 million before Columbus.
Hunters were paid by large railroad concerns to destroy entire herds for several reasons:
- The herds formed the basis of the economies of local Plains tribes of Native Americans.
- Herds of these large animals on tracks could damage locomotives when the trains failed to stop in time.
- Herds often took shelter in the artificial cuts formed by the grade of the track winding though hills and mountains in harsh winter conditions. This could hold up a train for days.
larger versionBison are now raised for meat and hides. Over 250,000 of the 350,000 remaining bison are being raised for human consumption. Bison meat is lower in fat and cholesterol than beef which has led to the development of beefalo, a fertile cross-breed of bison and domestic cattle. Recent genetic studies of privately-owned herds of bison show that many of them include animals with genes from domestic cattle; there may be as few as 15,000 pure bison in the world. The numbers are uncertain because the tests so far used mitochondrial DNA analysis, and thus would miss cattle genes inherited in the male line; some of the hybrids look exactly like purebred bison.
The bison is a symbol of Manitoba, the Royal Canadian Mounted Police, and North Dakota State University.

Buffalo is a city located in Erie County, New York. As of the 2000 census, the city had a total population of 292,648. It is located on the eastern end of Lake Erie. It is located at the beginning of the Niagara River which flows northward, over the Niagara Falls and into Lake Ontario. Erie and Niagara Counties have a combined population of 1,170,111 (2000). Buffalo itself the second largest city in New York state after New York City. It is the county seat of Erie County6.
The origin of the name is thought to be from the French "beau fleuve" - "beautiful river" which refers to the Niagara River.
A good way to see Buffalo is from the observation deck at the top of the 30-story City Hall. Buffalo has the third-oldest zoo in the United States, the Albright-Knox Art Gallery, and Kleinhans Music Hall known for its acoustical qualities.
The world-famous Buffalo chicken wings were invented in a Buffalo bar (The Anchor Bar) in 1964. The city is also famous as the birthplace of folk singer and songwriter Ani DiFranco, as well as the home of her independent record label, Righteous Babe Records.
Several US Navy ships have been named USS Buffalo in honor of the city.
The city is served by Buffalo Niagara International Airport.
History
The first European settlement in what is now Erie County was in 1758 by the French at the mouth of Buffalo Creek. It was destroyed a year later because of an impending English attack.The first American to settle in Buffalo was Cornelius Winney in 1789, who set up a log-cabin store for trading with the Native American community there. The land upon which Buffalo was built was part of the Holland Land Purchase and was sold through the Holland Land Company's office in Batavia, NY, starting in 1801. By 1811, there was an Anglo-American village of some 500 people at Buffalo. In 1808 the new Niagara County, New York was formed (which at the time included what is now Erie County), with Buffalo as the county seat.
On 30 December, 1813, during the War of 1812, British troops and their Native American allies captured the village of Buffalo and burned much of it to the ground.
Buffalo was incorporated as a town in 1816.
Upon the completion of the Erie Canal in 1825, Buffalo became the western end of the 524-mile waterway starting at New York City. At the time Buffalo had a population of about 2,400 people; with the increased commerce of the canal, the population boomed. Buffalo was reincorporated as a city in 1832, at which time it had some 10,000 people.
Buffalo was a terminus of the Underground Railroad, an informal series of safe houses for runaway slaves from the U. S. South. After hiding at the Michigan Avenue Baptist Church, the slaves would take a ferry to Fort Erie, Ontario, Canada and to their freedom.
Several U.S. presidents are connected to Buffalo history. Millard Fillmore took up permanent residence in Buffalo in 1822 before he became president. Grover Cleveland lived in Buffalo from 1854 until 1882, and became mayor of the city. William McKinley was shot on September 5, 1901 at the Pan-American Exposition in Buffalo, and died in Buffalo on the 14th. Theodore Roosevelt was then sworn in on September 14th, 1901 at the Wilcox Mansion (currently a National Historic Site), becoming one of only a few presidents to be sworn in outside of Washington. With over half a million people, and many immigrants from Ireland, Italy, Germany and Poland, Buffalo was one of the major cities of the United States at the time.

Three United States Navy ships have been named Buffalo, the first after the large mammal, the others after the city of Buffalo, New York.
Light cruiser hull CL-84 was to have been named Buffalo, but was cancelled 16 December 1940.
- The first Buffalo was a 3-gun sloop purchased April 1813 at Philadelphia and attached to the Delaware Flotilla. Under the command of Lieutenant Samuel Angus, she took part in the flotilla's 29 July 1813 attack on British frigate HMS Junon and sloop-of-war HMS Martin. She was sold at Philadelphia 12 August 1816.
- The second Buffalo was an auxiliary cruiser purchased for use in the Spanish-American War.
- The third Buffalo (SSN-715) is the 25th Los Angeles-class nuclear attack submarine.
Hull CL-99 was also to have been a Buffalo, but was converted into the light aircraft carrier Bataan (CVL-29).
Hull CL-110 was yet another attempt to have a cruiser Buffalo, but was cancelled 12 August 1945.

It probably survives in the wild in India, Nepal, Bhutan and Thailand; is very widespread as a domestic animal in Asia, South America. North Africa and Europe; and is feral in northern Australia. Wild-living populations also exist in much of South-east Asia but their origin is uncertain: they may be the descendants of wild Water Buffalo, formerly domesticated ferals, or a mixture of both.
The classification of the Water Buffalo is uncertain. Some authourties list a single species, Bubalus arnee with two subspecies, the River (B. arnee bubalis) and Swamp (B. arnee carabanesis) Water Buffalos; others regard them as closely related but separate species.
Milk from one or both of these is used for Mozzarella.
